Gastronomy and golf with green views
In January 2020, Thomas Leth and Mike Niebuhr took over the restaurant of Skanderborg Golf Klub, and Restaurant Leth Dining saw the light of day. Following extensive refurbishment and a couple of months in lockdown, Thomas Leth and Mike Niebuhr have now opened the doors to the members of the golf club and other diners hungry for a meal in green surroundings with a Nordic touch.
Skanderborg is situated in the Danish lake district, which is famous for its stunning countryside, and the town now has a new restaurant – to the delight not least of passionate golfers. The proprietor is Thomas Leth, who has been doing private dining for a number of years. Having been suddenly offered the chance of living out his dream of opening his own restaurant, he called his good friend, Mike Niebuhr.
“Thomas and I know each other from the hotel industry, and when he called me, I was ready for an adventure,” says Mike Niebuhr, who is the restaurant manager.
The corona lockdown delayed the opening by a couple of months, but gave them a bit extra time for the very extensive refurbishment that was needed.
“We never got started because of the corona situation even though we were, in fact, ready to open. We finally opened our doors on 18 May 2020 to what has since become a huge success. People have been extremely positive, and we’ve already been awarded DinnerBooking’s Excellence Diploma because of all the good reviews,” says Mike Niebuhr.
The golf club used to have a canteen where food was served on trays through a hatch, and people then took their food to a table. The décor was from a different era with blue carpets, office furniture and sliding doors in the middle of the room.
“We’ve overseen renovation work at several levels, and the result is a modern, Nordic style – to match our food. We wanted the room to be as airy as possible,” says Mike Niebuhr.
Thomas Leth and Mike Niebuhr designed the interiors themselves, and went for ash vinyl floors in the restaurant, with white walls and Nordic furniture. And with the view of the golf course, the woods and the lake Skanderborg Sø as the focal point.
Black Troldtekt acoustic panels have been installed on the ceilings for a contemporary, calm and carefully balanced look. Diners as well as the proprietors have noticed a marked difference in the acoustics.
“All the golf club regulars have commented on how the atmosphere has changed. The noise does not travel anymore, and you’re not disturbed by other people’s conversations at the other tables. The great acoustics are mentioned specially by guests, which is a sign that we’ve made the right choice,” Mike Niebuhr.
The food at Leth Dining is Nordic with an Asian twist, and a 14-course menu is on offer. However, the kitchen also serves simple sandwiches for golfers as well as some of the biggest vol-au-vents in Denmark.
