Restaurant Moment from Djursland has opened a sister restaurant in the SHiP building in Aarhus Docklands. Here at Novel, food is served with the same eye for sustainability, simplicity and joy for the local environment.

At Aarhus Docklands you are far from the fields and nature around Restaurant Moment. On the other hand, you have a community that is passionate about green gastronomy, supplemented with a seasonal menu of game, fish, molluscs and shellfish. The restaurant has now also been recognised with a green Michelin star, which is awarded specifically to restaurants that are committed to sustainability. It is important for Restaurant Novel that the setting for the meal also reflects its philosophy of a warm and welcoming atmosphere, which is why all the furniture is carefully selected and crafted locally.
Clean lines
The space is characterised by glass panels and views of the water and forest, while curtains and lighting create an intimate atmosphere in the evenings. The ceiling acts as a unifying element for the room and also has the important function of ensuring good acoustics, which are very important in a restaurant. The grey Troldtekt panels are untreated and therefore vary in their expression. The grey colour brings visual calm to the room.
The furnishings are intended as small islands to sit by, but what islands! Here, Kjeldtoft joinery in Aarhus was chosen for the carpentry work, supplying all of the tables as well as the bar, shelves and other furniture. Everything is made of oak with matching chairs from J L Møllers Møbelfabrik in Aarhus. The restaurant's cohesive design creates a beautiful whole and is yet another example of how to get the best out of raw materials, be it a beetroot or an oak plank.
