A shower of Michelin stars for some of the Nordic region's most distinctive restaurants
The Michelin Guide has now awarded its stars for 2023 to the best Nordic restaurants. This year's starry line-up features both brand-new and more established eateries. Once again, many restaurants with Troldtekt acoustic solutions are featured on the new list.
On Monday 12 June, the Finnish city of Turku hosted an important day for the gastronomy industry's calendar: the annual awarding of the Nordic Michelin stars.
A whole 42 new restaurants have found their way into the guide, which now lists a total of 271 restaurants in Denmark, Finland, Iceland, Norway and Sweden. 81 of these have been awarded stars. The others have received other forms of recognition, including a Bib Gourmand for high quality or Michelin’s Green Clover for focus on sustainable gastronomy.
The Michelin Guide only awards stars on the basis of food quality. However, in several of the acclaimed restaurants, it is possible to combine a unique dining experience with acoustic comfort. 2023 is another year where the Michelin stars have twinkled above several restaurants where Troldtekt acoustic solutions have been chosen as part of a distinctive interior.
Stars and clovers
The following restaurants with Troldtekt solutions were awarded stars and/or a green clover in the 2023 edition of the Michelin Guide for the Nordic region:
Domestic, Aarhus: One star plus a green clover
Presence, ambition and local ingredients with a focus on sustainability are keywords at this restaurant in the heart of Aarhus. White-painted Troldtekt features as a recurring material in the restaurant, the bar and in the orangery, which is often used to host events and functions.
Substans, Aarhus: One star
Substans has moved to the harbour district at Aarhus Ø, where guests can enjoy a sublime food experience with views of the bay and forest from 11 floors up. A black-painted Troldtekt ceiling helps to ensure a pleasant atmosphere.
Novel, Aarhus: Green clover
Novel is a new addition to the Michelin Guide and is located at Aarhus Ø. The kitchen uses ingredients sourced from its own farm – and sets the bar high when it comes to leaving a positive carbon footprint. Troldtekt acoustic ceilings in natural grey were chosen for the interior design.
Moment, Rønde: Green clover
For the owners of this restaurant in rural Djursland, the driving force is the desire to be as sustainable as possible. This also impacts the restaurant's furnishings, which include solar cells and straw insulation elements. Troldtekt acoustic panels in natural wood were chosen for the ceilings.
Henne Kirkeby Kro in Western Jutland is once again on the list, with two Michelin stars. Troldtekt was not chosen for the restaurant itself, but is used in Staldgården, the inn’s breakfast restaurant.
More restaurants listed in the guide
Several other restaurants where Troldtekt acoustic solutions are a feature were also highlighted in this year’s guide, but without stars:
STUDIO, in Copenhagen's Carlsberg district, interprets Nordic gastronomy with inspiration from other parts of the world. The ceilings are black-painted Troldtekt, which discreetly absorbs the sound in this lofty space.
This restaurant, which is located on Axeltorv, nurtures a strong passion for Danish ingredients. The interior design underpins the restaurant's philosophy of good and honest materials and surfaces, including by using different Troldtekt design variants in natural wood, black and red.
Connection by Alan Bates, Copenhagen
One of Copenhagen’s smallest restaurants sets the scene for a very special gastronomic experience. Acoustics are an important part of this, which is why Troldtekt v-line (which is based on our special FUTURECEM™ cement) has been chosen for the ceiling.
Sushi Anaba, Copenhagen
Chef Mads Battefeld prepares sushi in an exclusive manner at his restaurant in Nordhavn, Copenhagen. The small, elegant restaurant features black-painted Troldtekt line with milled longitudinal grooves, which were chosen for their sound-absorbing qualities combined with a distinctive look.
Tabu focuses on giving diners the combined pleasure of quality food, a well-curated wine selection and pleasant acoustics. The restaurant uses fresh organic local ingredients. To ensure the acoustic component of the dining experience, Troldtekt in natural wood was chosen for the ceilings.
à terre, Copenhagen
Here, guests experience French cuisine with added inspiration from other places around the world. Troldtekt acoustic ceilings in natural gray were chosen for the interior design.
Human's core values are very much centred on quality and sustainability, as reflected in both the seasonal menus and the design. The interior is in a Nordic style, with natural colours like beige and brown used together with a deep blue contrast colour. Troldtekt acoustic panels in natural wood were chosen for the ceilings.

- The Michelin Guide distributed the Nordic stars at an event in Turku on 12 June 2023.
